🌊 The Water Bath
This is what creates the silky, custard-like texture. The steam from the water heats gently and evenly — preventing the rubbery, dry eggs you get from direct oven heat. Place your muffin tin inside a roasting pan, pour in boiling water to halfway up the sides. Do not skip this.
🌡️ Low Temperature
300°F (150°C) only. High heat makes eggs rubbery — always. The low, gentle heat combined with the water bath is what gives you that wobbly, creamy, custard interior that makes people think you’re a professional. Don’t be tempted to increase the temperature to speed things up.
🌀 Blend, Don’t Whisk
A blender (not a whisk) fully emulsifies the eggs and cottage cheese into a silky, uniform base. Blending also introduces air — which creates that light, slightly puffed texture. 30 seconds on high is all it takes. An immersion blender works too.
🧁 Silicone Over Metal
A silicone muffin pan is strongly recommended — egg bites release perfectly without sticking or tearing. Metal muffin tins work, but grease very thoroughly and run a thin knife around the edges immediately after removing from the oven while still warm.
⏰ Don’t Overbake
Remove the egg bites when the edges are set but the centres still have a slight jiggle. They continue cooking from residual heat for several minutes after leaving the oven. Overbaked egg bites turn spongy — so when in doubt, take them out a minute early.
🧊 Freeze & Reheat
Cool completely, then freeze individually on a baking sheet before transferring to a zip-lock bag. Reheat from frozen: microwave on medium power for 60–90 seconds. Wrap in a damp paper towel while reheating to retain moisture.

🥚 Full-Fat Cottage Cheese
Use full-fat, not low-fat. The fat content is what creates that rich, creamy texture. Low-fat versions produce a watery mixture that bakes up thin and rubbery. This is a non-negotiable.
💧 Pat Your Toppings Dry
Any wet ingredients — roasted peppers, spinach, tomatoes — must be patted completely dry. Excess moisture prevents the egg bites from setting properly and creates a watery, unpleasant texture.
🧀 Grate Your Own Cheese
