  4. Sear patties 3-4 min per side. Set aside.
  5. Cook mushrooms 5-6 min undisturbed. Add onion 4-5 min.
  6. Add garlic 30 sec.
  7. Sprinkle flour, stir 1 min.
  8. Slowly whisk in broth + Worcestershire + Dijon + thyme.
  9. Simmer 2-3 min until gravy thickens.
  10. Return patties, cover, simmer 10-12 min until 165°F internal.
  11. Garnish with parsley. Serve over mashed potatoes.
