Instructions
Heat the oven
Heat the oven to 350°F (175°C). If you are baking in cast iron, you will start in the same skillet on the stove.
Crisp the beef bacon
Cook the chopped beef bacon in a large oven-safe skillet over medium heat for 5 to 6 minutes, until crisp, then lift it out with a slotted spoon. If you are leaving it out, add 1 tablespoon of oil to the pan instead.
Brown the beef with the onion and pepper
Add the ground beef, onion and green pepper and cook for 7 to 8 minutes, breaking up the beef, until no pink remains and the onion is soft. Stir in the garlic for the last minute, then spoon off any excess fat.
Whisk the sauce
In a bowl, whisk together the barbecue sauce, ketchup, brown sugar, mustard, Worcestershire sauce, vinegar, smoked paprika, chili powder and a good pinch of salt and pepper.
Combine gently
Add the baked beans with their sauce and the drained kidney, pinto and butter beans to the skillet. Pour over the sauce, add most of the beef bacon and fold everything together gently so the beans stay whole.
Bake until thick
Bake uncovered for 45 to 60 minutes, until the sauce is thick, bubbling at the edges and lightly caramelised on top. Scatter the rest of the beef bacon over for the last 5 minutes.
Rest, then serve
Let the beans stand for 10 minutes before serving. The sauce keeps thickening as it cools slightly, and the flavours settle.

How to Make Cowboy Beans (and Get Them Thick)

Brown the beef properly
Let the beef sit for a minute before you stir it so it catches a brown crust. Grey beef means flat beans; browned beef means depth.
Drain the right cans
Drain and rinse the kidney, pinto and butter beans, but keep the sauce in the can of baked beans — that sauce is the base for everything else.
Fold, do not stir hard
Butter beans break easily. Fold with a wide spoon from the bottom up so the beans stay whole and the sauce coats them evenly.
Judge by the sauce, not the clock
They are ready when the sauce coats the back of a spoon and bubbles thickly at the edges. Runny after an hour? Give them 10 to 15 minutes more.
Leaving out the beef bacon? Add one extra teaspoon of smoked paprika. The ground beef already brings plenty of savoury depth, and the paprika replaces the smokiness.

Brown the beef bacon, ground beef, onion and pepper on the stove first — this step cannot be skipped. Put everything in a 6-quart slow cooker and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours. Take the lid off for the last 30 minutes so the sauce thickens.
Make them a day or two ahead
Bake as normal, cool and refrigerate for up to 2 days. Reheat covered at 325°F for 30 to 40 minutes, then uncover for the last 10 minutes. The flavour is even better on day two.
Cook them on the grill
Assemble in a cast iron skillet or a disposable foil pan and set it over indirect medium heat, about 350°F, with the lid closed. Cook for 45 to 60 minutes, stirring once. The smoke from the grill gives them an even deeper flavour.
Quick stovetop version
Short on time? After adding the beans and sauce, simmer uncovered over medium-low for 20 to 25 minutes, stirring often, until thick. You lose the caramelised top but gain half an hour.
