Why 7 Layer Bars Work Without Coconut

Made for the no-coconut crowd

White chocolate chips take the coconut’s place and melt into the condensed milk, giving the same creamy, chewy middle. Anyone who picks the coconut out of the classic bar can eat these whole.

Seven layers, every one tasted

Buttery crust, dark chocolate, caramel-like butterscotch, sweet white chocolate, toasty pecans and a condensed milk layer that bakes chewy and golden. Each bite cuts through all of them.

A crust that holds

The crumbs are mixed with the butter, pressed hard and pre-baked for 8 minutes. That short step keeps the base from crumbling or turning soggy, the most common complaint about these bars.

One bowl, no mixer

Stir, press, scatter, pour and bake: about 15 minutes of hands-on work. One 9×13 pan gives 24 bars for a bake sale, a potluck or a week of lunchbox treats.

  • ½ tsp1 tsp2 tsp2 tsp alcohol-free vanilla (optional)
  • flaky salt, to finish (optional)

Sweetened condensed milk, not evaporated; it is the glue that holds the layers. White chocolate chips take the place of the coconut; toffee bits or coarsely crushed pretzels work too. Alcohol-free vanilla keeps it halal. Metal pan at 350°F; a glass pan at 325°F.

Instructions

  1. Prepare the pan

Heat the oven to 350°F (175°C), or 325°F (160°C) for glass. Line an 8×8-inch pana 9×13-inch pantwo 9×13-inch pansan 18×13-inch half sheet pan with parchment, leaving an overhang on two sides for lifting.

  2. Press the crust

Stir the crumbs, melted butter and salt until it looks like damp sand. Press it very firmly into the pan with the flat bottom of a measuring cup, right into the corners.

  3. Pre-bake 8 minutes

Bake the crust for 8 minutes, until it smells toasty. This sets the butter, so the crust holds together under the condensed milk and when cut.

  4. Layer the chips and nuts

Keep back a small handful of chocolate chips and pecans. Scatter the rest of the chocolate chips over the hot crust, then the butterscotch chips, white chips and pecans in even layers.

  5. Pour the milk over everything

Stir the vanilla into the condensed milk. Drizzle it in slow zigzags over the whole pan, right to the edges, so every chip is coated. Scatter the reserved chips and pecans on top and press down lightly.

  6. Bake

Bake 20 to 25 minutes22 to 27 minutes24 to 30 minutes, swapping the pans halfway25 to 30 minutes, until the edges are deep golden and bubbling and the center is light golden and no longer looks wet or wobbles.

  7. Cool completely

Cool on a rack for at least 2 hours, then chill for 1 hour. Warm bars are molten inside and fall apart when cut.

  8. Lift and cut

What to Use Instead of Coconut

White chocolate is the default because it melts into the milk the way coconut soaks it up. Any of these works in its place, at the amount shown for one 9×13:

Instead of coconutFor a 9×13Result
Instead of coconutWhite chocolate chips (as written)For a 9×13¾ cupResultCreamy and sweet; the closest match to coconut’s chew in the milk

Swap only the white chips, and keep the other six layers as written, so the condensed milk still has the right amount to coat.

Five Rules for Bars That Set and Slice Cleanly

A 9x13 pan with a pressed graham crust half covered in chocolate and butterscotch chips, bowls of pecans and white chocolate chips, a jug of sweetened condensed milk and a bowl of melted butter

Building the layers: the pressed graham crust half covered in chocolate and butterscotch chips, with the pecans, white chips, condensed milk and melted butter beside the pan.

1

Press hard, then pre-bake

Pack the buttered crumbs with the flat bottom of a cup until they feel solid, then bake 8 minutes. A loose, raw crust is what crumbles when the bars are cut.

2

Chips under, milk over

The condensed milk goes on last, poured in slow zigzags to every edge and corner. Every chip it touches is glued in; bare patches fall apart.

3

Stick to the amounts

About 3¾ cups of chips and nuts is what one can of milk can coat. Pile on more and the extra sits loose on top and rolls off the bars.

4

Judge by the edges

Without coconut there is no toasted shred to watch. Look for deep golden, bubbling edges and a center that has turned light golden and stopped looking wet.

5

Cool completely before cutting

Two hours on a rack, then an hour in the fridge. The condensed milk sets as it cools; warm bars smear, ooze and crumble.

Bake Times by Pan, and How to Tell They Are Done

All times are at 350°F (175°C) in a metal pan unless noted, after the 8-minute crust pre-bake.

The Done Test

Without coconut there is no toasted top to watch, so read the edges and the center instead:

CheckEdgesNot yetPale and flatDoneDeep golden and bubblingToo farDark brown and hard
CheckCenterNot yetShiny, wet, wobbles when the pan is nudgedDoneLight golden, set, barely movesToo farBrowned all over
CheckMilk between the chipsNot yetRunnyDoneThick, bubbling slowlyToo farDark caramel that sets hard

The bars always look softer in the pan than they will be. Once the center stops looking wet, take them out; the condensed milk keeps setting for the next two hours.

Six Ways to Make Magic Cookie Bars

Same pan, same method, one change each. Tap a version:

Classic Magic Cookie Bars With Coconut

The original layers of chocolate and coconut, for anyone who came for them. Swap the white chips for 1⅓ cups (about 100 g) sweetened shredded coconut, scattered over the pecans before the milk goes on.

Drizzle the condensed milk so it soaks the coconut, and bake 25 to 28 minutes after the crust, until the coconut is toasted golden, not pale. About 250 calories a bar.

Nut-Free 7 Layer Bars

Leave out the pecans and use 1 cup crisp rice cereal or coarsely crushed pretzels for crunch, or roasted pumpkin or sunflower seeds.

Check the chip labels for tree-nut warnings, and skip toffee bits, many of which contain almonds. The bake time stays the same.

Pretzel Salted Caramel Bars

  • Crust: 1 cup graham crumbs + 1 cup finely crushed pretzels, the same butter, no salt
  • Caramel bits or toffee bits in place of the butterscotch chips
  • 1 cup coarsely broken pretzels in place of the white chips
  • Finish: ¼ cup thick caramel sauce over the cooled slab, and flaky salt

Sweet, salty and crunchy. Drizzle the caramel only once the bars are cold, or it runs off.

Peanut Butter 7 Layer Bars

Swap the butterscotch chips for peanut butter chips and the pecans for chopped roasted peanuts. Warm ⅓ cup smooth peanut butter for 20 seconds and drizzle it over the condensed milk before baking.

Richer and a little denser; give it the full 27 minutes, and cool it completely.

Cranberry White Chocolate Holiday Bars

Keep the semi-sweet chips, swap the butterscotch for 1 cup more white chocolate chips, and add ¾ cup dried cranberries. Use pecans or chopped pistachios, and stir the zest of an orange into the condensed milk.

Red, green and white: cut it into small squares for cookie tins or the Christmas dessert table.

Gluten-Free Magic Cookie Bars

Use 2 cups of crumbs from certified gluten-free graham-style crackers or vanilla cookies, with the same butter and salt. Or press in an almond flour crust: 2 cups (200 g) almond flour, ¼ cup sugar, a pinch of salt and 5 tbsp melted butter, pre-baked 10 minutes.

Check that the chips are labeled gluten-free. The almond crust adds tree nuts.

Common Mistakes With 7 Layer Bars

Too gooey to cut

Why: cut while warm, or taken out while the center still looked wet. Fix: 2 hours on a rack and 1 in the fridge; next time bake until the edges bubble and the center turns light golden.

The crust crumbles

Why: crumbs pressed loosely, not enough butter, or a raw crust. Fix: damp-sand texture, pack it hard with a flat cup, pre-bake 8 minutes.

Bare, dry patches

Why: the milk was poured in one spot and never reached the corners. Fix: slow zigzags over the whole pan, right to the edges.

Hard, chewy edges

Why: overbaked, or a glass or dark pan at 350°F. Fix: 325°F for glass, and start checking at 22 minutes.

Welded to the pan

Why: no parchment. The condensed milk caramelizes onto the metal. Fix: parchment with an overhang on two sides, to lift the whole slab out.

Chips roll off when cut

Why: too many mix-ins for one can of milk, or nothing pressed down. Fix: stick to the amounts and press the top layer lightly before baking.

Soggy, greasy base

Why: butter poured into the pan instead of mixed in, or no pre-bake. Fix: stir the butter into the crumbs first and bake the crust 8 minutes.

Evaporated milk used

Why: the cans look alike. Evaporated milk is thin and unsweetened and never sets. Fix: only sweetened condensed milk works here.

Cutting, Serving and Storing

Ready for the party: squares on a parchment-lined board, with pecans and chocolate chips scattered around.

How to Cut Clean Bars

1

Chill first

An hour in the fridge after the bars reach room temperature. Cold condensed milk cuts; warm condensed milk stretches.

2

Lift the slab out

Pull it out by the parchment onto a board, so the knife has room and the pan stays unscratched.

3

Long, sharp knife

A chef’s knife longer than the slab is wide. Press straight down; sawing drags the chips.

4

Wipe between cuts

Dip the blade in hot water and wipe it dry after every cut, so each edge stays clean.

5

Trim the edges

Shave a thin strip off all four sides for straight, bakery-style bars. The edges are the cook’s share.

6

Score, then cut

Mark the grid lightly first: 4 by 6 for 24 bars, 6 by 6 for 36 small squares.

Magic Cookie Bars Without Coconut: FAQs

What can I use instead of coconut in magic cookie bars?

White chocolate chips are the closest swap: ¾ cup for a 9×13, melting into the condensed milk for the same creamy chew. Toffee bits, coarsely crushed pretzels, rolled oats, crisp rice cereal or extra graham crumbs also work. The swap table above gives amounts and how each one changes the bar.

Are 7 layer bars the same as magic cookie bars?

Nearly. Magic cookie bars are the original: graham crust, condensed milk, chocolate chips, coconut and nuts. Seven layer bars, also called Hello Dolly bars, add butterscotch chips, counting butter, crumbs, chocolate, butterscotch, coconut, nuts and milk as seven. Here white chocolate takes the coconut’s spot, so there are still seven.

Why are my magic cookie bars so gooey?

Usually they were cut warm or taken out too early. They need at least 2 hours on a rack and an hour in the fridge to set. If the center still looked wet and wobbly when they came out, bake a few minutes longer next time, until the edges are deep golden and bubbling.

Why is the crust on my 7 layer bars crumbly?

The crumbs were pressed too loosely, had too little butter, or went in raw. Stir the butter in until the crumbs look like damp sand, pack them hard with a flat-bottomed cup and pre-bake the crust for 8 minutes. Cutting the bars warm also breaks the base.

Can I use evaporated milk instead of sweetened condensed milk?

No. Evaporated milk is thin and unsweetened, so it never bakes into the thick, chewy layer that holds the bars together. Sweetened condensed milk can be made at home by gently simmering whole milk with sugar, stirring often, until it reduces to about 1¼ cups, then cooling it.

Does the condensed milk go on first or last?

Last, in this recipe. Pouring it over the chips and pecans coats every layer, keeps the white chips from scorching and lets the top turn golden. Some older recipes pour it over the crust first; that works too, but the toppings must be pressed in firmly or they fall off when cut.

How long do you bake magic cookie bars?

At 350°F (175°C), 22 to 27 minutes for a 9×13, after an 8-minute crust pre-bake. In a glass pan, bake at 325°F (160°C) for 25 to 30 minutes. They are done when the edges are deep golden and bubbling and the center no longer looks wet.

Can I make magic cookie bars in an 8×8 pan?

Yes, with a half batch: ¼ cup butter, 1 cup crumbs, ½ cup each of chocolate and butterscotch chips, 6 tbsp white chips, ½ cup pecans and half a can of condensed milk. Bake 20 to 25 minutes after the crust. Tap 8×8 on the card for every amount.

Do 7 layer bars need to be refrigerated?

Not for the first few days. They keep up to 3 days at room temperature in an airtight container, or a week in the fridge, where they turn firmer and chewier. In a warm kitchen, keep them in the fridge from the start.

Can you freeze 7 layer bars?

Yes, for up to 3 months. Cut them first, wrap each bar, and freeze them in a bag. Thaw in the fridge overnight or for about an hour on the counter. They cut neatly from frozen, so it is the easiest way to get clean edges.

Can I make magic cookie bars ahead of time?

Yes; they are better the next day. Bake them 1 to 2 days ahead, cool completely, and keep them covered in the pan or cut in an airtight container. For a party, cut them cold from the fridge on the day for the cleanest edges.

How do you cut 7 layer bars without them falling apart?

Chill the slab for an hour, lift it out by the parchment and use a long, sharp chef’s knife. Press straight down rather than sawing, and wipe the blade with a hot, damp cloth between cuts. Trimming the outer edges first gives straight sides.

Can I make magic cookie bars without nuts?

Yes. Leave out the pecans or use 1 cup crisp rice cereal, crushed pretzels or roasted sunflower seeds. Check the chip labels for tree-nut warnings, and skip toffee bits, since many contain almonds. The nut-free tab has the full version.

Are magic cookie bars gluten-free?

Not as written: graham crackers contain wheat. Use 2 cups of crumbs from certified gluten-free graham-style crackers or cookies, or an almond flour crust, and check that the chips are labeled gluten-free. The gluten-free tab has the amounts.

Save the pin so the recipe, the coconut swaps and the six versions are one tap away.
