Why This Potato Soup Is Creamy Without Dairy

Creamy from the potatoes

Blended Yukon golds are the cream in this soup. A cup of oat or coconut milk at the end makes it silky, and nobody misses the dairy.

Twenty minutes of work

Chop, load the slow cooker and walk away. The only job at the end is a minute with a blender and a stir.

Loaded, like the pin

Crispy turkey or beef bacon, dairy-free cheddar and green onions on top: the baked-potato-soup bowl, without milk or cheese.

Eight more for the season

Lentil, white bean, chickpea, chili, tikka masala and more: all dairy-free, all slow cooker, all below the soup.

  • 1 small1 large2 medium3 medium yellow onion, diced
  • 1234 carrots, diced
  • 1234 celery ribs, diced
  • 3468 garlic cloves, minced
  • 3 cups4 cups5½ cups8 cups vegetable or halal chicken broth
  • 1122 bay leaf
  • ¾ tsp1 tsp1½ tsp2 tsp dried thyme
  • ¼ tsp½ tsp¾ tsp1 tsp smoked paprika
  • 1 tsp1½ tsp2 tsp1 tbsp salt (less if the broth is salted)
  • ¼ tsp½ tsp¾ tsp1 tsp black pepper
  • ¾ cup1 cup1½ cups2 cups unsweetened plain oat milk or canned coconut milk, to finish
  • 1½ tbsp2 tbsp3 tbsp¼ cup dairy-free butter or olive oil
  • 1 tbsp2 tbsp3 tbsp¼ cup nutritional yeast (optional, for a cheesy note)
  • crispy turkey or beef bacon, dairy-free cheddar shreds and sliced green onions, to top

Yukon golds blend naturally creamy; russets go grainy. Oat milk tastes neutral; coconut milk is richer with a faint coconut note. Check that both are unsweetened. Dairy-free: read the broth and the butter labels. Bacon: halal turkey or beef bacon, cooked separately so it stays crisp.

Instructions

  1. Load the slow cooker

Add the potatoes, onion, carrots, celery, garlic, broth, bay leaf, thyme, paprika, salt and pepper. The broth should just cover the vegetables; add a splash more if not.

  2. Cook until falling apart

Cover and cook on LOW 7 to 8 hours or HIGH 4 hours, until a potato cube crushes against the side with a spoon. Undercooked potatoes will not blend creamy.

  3. Blend half

Fish out the bay leaf. Blend about half the soup with an immersion blender, in short pulses, leaving the rest chunky. Or mash it well with a potato masher.

  4. Make it creamy

Stir in the oat or coconut milk, dairy-free butter and nutritional yeast. Cover and heat on HIGH 15 minutes.

  5. Adjust and season

Too thick, add a splash of broth; too thin, blend a little more. Taste and add salt and pepper; dairy-free soups need a little more seasoning than creamy ones.

  6. Top and serve

Ladle into bowls and top with crispy turkey or beef bacon, dairy-free cheddar and green onions.

Four Rules for a Velvety Potato Soup

Looking down into an open oval slow cooker filled with cubed golden potatoes, diced carrots, chopped celery, diced onion and minced garlic in broth with a bay leaf, beside it on a wooden board a small bowl of smoked paprika, a few whole potatoes and a can of coconut milk, warm kitchen light

Into the slow cooker: cubed Yukon golds, carrots, celery, onion and garlic in broth with a bay leaf.

1

Yukon golds, not russets

Waxy-starchy Yukon golds blend smooth and buttery. Russets turn grainy and gluey when blended.

2

Cook until they fall apart

The potatoes should crush with a spoon. Firm potatoes give a thin, lumpy soup no matter how long you blend.

3

Blend half, not all

Pulse half the pot for body and leave the rest chunky. Over-blending potatoes makes them gluey.

4

Dairy-free milk goes in last

Oat or coconut milk in the final 15 minutes, never at the start; hours of heat can make it separate or turn bitter.

Fall Crockpot Recipes Dairy Free: FAQs

How do you make potato soup creamy without dairy?

Use Yukon gold potatoes, cook them until they fall apart, and blend about half the pot. Then stir in unsweetened oat milk or canned coconut milk and a little dairy-free butter at the end. The potatoes themselves do most of the work.

How long does potato soup take in the crockpot?

7 to 8 hours on LOW or about 4 hours on HIGH, until the potatoes crush easily with a spoon, then 15 minutes on HIGH after the milk goes in.

What are the best potatoes for dairy-free potato soup?

Yukon golds. They are naturally buttery and blend smooth. Russets turn grainy or gluey when blended; red potatoes stay too firm to make it creamy.

Does it taste like coconut?

With oat milk, no. With coconut milk there is a faint coconut note under the smoked paprika and toppings; most people do not notice it. Oat milk is the neutral choice.

Can you freeze dairy-free potato soup?

Yes, best before the milk goes in. Freeze it in portions for up to 3 months, then reheat and stir in the milk. Potatoes soften slightly after freezing but blended soup hides it.

How do I thicken it?

Blend a little more of the pot, simmer it uncovered on HIGH for 20 minutes, or stir in 1 tbsp cornstarch mixed with 2 tbsp cold water. It also thickens as it stands.

Is this potato soup vegan?

Yes, with vegetable broth, olive oil or vegan butter, oat milk and no bacon. The vegan tab swaps the bacon for smoky roasted chickpeas.

What dairy-free cheese melts best?

Finely shredded dairy-free cheddar melts best on very hot soup. Nutritional yeast stirred in gives a cheesy flavor without any melting at all.

Can I add the bacon to the slow cooker?

Cook it separately and add it on top so it stays crisp. Use halal turkey or beef bacon; a little stirred in at the end adds smoke.

Can I make it on the stove or in the Instant Pot?

Stove: simmer everything covered 20 to 25 minutes until the potatoes are very soft. Instant Pot: HIGH pressure 10 minutes with a 10-minute natural release. Blend and finish the same way.

What are some other fall crockpot recipes that are dairy-free?

Butternut squash and lentil soup, white bean and kale stew, turkey and wild rice soup, pear and parsnip bisque, chicken tikka masala made with coconut milk, sweet potato black bean chili, apple cider pulled chicken and a chickpea tagine. All eight are above.

Is this soup gluten-free?

Yes, as long as the broth is gluten-free; it is thickened with potatoes, not flour. Check the dairy-free cheese and bacon labels too.

How much does the recipe make?

About 6 bowls (roughly 1½ cups each) from the card as written in a 6-quart slow cooker. It scales to 4, 8 or 12 servings.

What do you serve with potato soup?

Crusty bread, a green salad with a sharp dressing, or a sandwich. For a fall dinner, it pairs with any of the slow-cooker mains above.
