Why This Chicken Street Corn Salad Works for Meal Prep
About 48 g of protein per lunch
Six ounces of chicken, Greek yogurt dressing and cotija make this one of the highest-protein salads you can pack, at around 470 calories.
Twenty-five minutes, one skillet
Char the corn, sear the chicken in the same pan, whisk the dressing. Four lunches done before the kitchen gets messy.
Tastes better on day two
Lime, chili and cilantro soak into the corn overnight. Nothing here wilts, so day four is as good as day one.
Street corn, as a salad
Everything people love about Mexican street corn, charred, creamy, limey and cheesy, without standing over a grill or eating off a cob at your desk.

Chicken thighs work the same way and stay juicier on day 4; cook them to 175°F. Frozen corn must be thawed and patted dry, or it steams instead of charring. Greek yogurt keeps the dressing high in protein; 2% is creamier than nonfat. Halal chicken as needed.
Instructions
Season the chicken
Toss the chicken cubes with half the oil, the lime juice, chili powder, paprika, cumin, garlic powder and salt. Leave while you char the corn.
Char the corn
Heat a large skillet over high with no oil. Add the corn in one layer and leave it 2 minutes, then stir and cook 3 to 4 minutes more, until spotted dark brown. Tip into a large bowl.
Sear the chicken
Add the rest of the oil to the same skillet over medium-high. Cook the chicken in one layer, turning once or twice, for 6 to 8 minutes until charred at the edges and 165°F inside. Rest 5 minutes.
Whisk the dressing
Whisk the yogurt, dressing lime juice, garlic, chili powder and salt, and thin with 1 to 2 tbsp water until it drizzles.
Toss the corn salad
Add the red pepper, red onion, jalapeño and cilantro to the corn and toss. Taste for salt and lime.
Pack it
Divide the corn salad among the containers, top with the chicken and the cheese, and pack the dressing in small separate pots. Cool completely before closing the lids; chill up to 4 days.
Four Rules for a Salad That Lasts Four Days

Meal prep in progress: charred corn in the skillet, chicken searing, and four containers waiting with small dressing pots.
Char the corn hard
A hot, dry skillet and patience. Dark spots are the street-corn flavor; pale corn tastes like any corn salad.
Even cubes, single layer
One-inch pieces cook evenly and char at the edges. A crowded pan steams the chicken gray.
Dressing on the side
Pack it in small pots and add it just before eating. Dressed in advance, the salad goes watery by day two.
Cool before lidding
Warm food sealed in a container steams and spoils faster. Let everything cool to room temperature, then chill.

High Protein Lunch Meal Prep: FAQs
How much protein is in this chicken street corn salad?
About 48 g per container: roughly 37 g from 6 oz of raw chicken breast, plus Greek yogurt dressing, cotija and corn. Around 470 calories.
How long does chicken meal prep last in the fridge?
Up to 4 days in airtight containers, with the dressing packed separately. Cool everything completely before closing the lids.
Can I use chicken thighs instead of breast?
Yes, and they stay juicier through day 4. Cook them to 175°F. Protein drops slightly, to about 44 g per container.
Can I use frozen corn?
Yes. Thaw it, pat it dry and char it in a hot dry skillet. Wet corn steams instead of browning.
Is street corn salad eaten hot or cold?
Cold or room temperature for meal prep. Warm the chicken alone for 30 to 45 seconds if you like it warm and keep the corn salad cold.
What can I use instead of cotija?
Feta is the easiest swap, crumbled the same way. A little finely grated parmesan works too.
Can I make the dressing without mayonnaise?
It already is: Greek yogurt, lime, garlic, chili powder and salt. That keeps it high in protein and light.
How do I keep meal prep salad from getting soggy?
Pack the dressing separately, dry the corn and vegetables well, and cool the chicken before it goes into the container.
Can I freeze it?
Freeze the cooked chicken only, in portions, for up to 3 months. The corn salad and dressing lose their texture in the freezer.
What other high protein lunch meal prep ideas are there?
Sheet-pan chicken thighs with vegetables, Greek chicken salad jars, turkey meatball bowls, turkey and lentil bowls, egg and chickpea bowls, salmon patties, beef and broccoli bowls and lamb wraps. All eight are above.
How do I make it more filling?
Pack it over rice or quinoa, add black beans, or add a halved hard-boiled egg. The protein table above shows what each adds.
Is this good for weight loss?
It is high in protein and moderate in calories, which helps keep you full. Portion and the rest of the day matter more than any single recipe.
Can I grill the chicken instead?
Yes. Thread the seasoned cubes on skewers and grill over medium-high for 8 to 10 minutes, turning, to 165°F. Grill the corn on the cob and cut it off.
Is this recipe halal and gluten-free?
Yes with halal chicken; there is no alcohol. It is gluten-free as written, as long as the spice blends are gluten-free.
