Why Monster Crispy Rice Treats Work

Three colors, three monsters

One batch, dipped green, purple and orange, makes a whole tray of different monsters. Children pick a color, and the tray looks like the pin.

Soft, not hard

Low heat, extra marshmallow and a light press keep the bars chewy for 3 days. Only the top third is coated, so they stay easy to bite.

No oven, one pot

Ten minutes on the stove, an hour to cool and twenty minutes to decorate. Children can do the sprinkles and the eyes.

Made for class parties

Each bar is its own snack: no plates, no cutting at the party, and they bag one by one. Nut-free ingredients as written; check the candy labels.

  • 8 oz (4½ cups)16 oz (9 cups)24 oz (13 cups)32 oz (18 cups) halal-gelatin or gelatin-free mini marshmallows

  • 2 tbsp3 tbsp¼ cup⅓ cup jimmies (long sprinkles) in green, purple and orange, each

Marshmallows: most standard ones contain pork gelatin, so use halal-gelatin or gelatin-free (vegan) ones. Vegan marshmallows melt slower; stir longer on low. Alcohol-free vanilla keeps the bars halal. Candy melts need no tempering; coconut oil thins them for dipping. Candy eyes: buy two sizes and check the label.

Instructions

  1. Line the pan

Line an 8×8-inch pana 9×13-inch pana 9×13 and an 8×8 pantwo 9×13 pans or a half-sheet pan with parchment, leaving an overhang to lift it out, and butter the paper lightly. Butter a silicone spatula too.

  2. Melt low and slow

Melt the butter in a large pot over low heat. Add the marshmallows and stir until just smooth, 4 to 6 minutes. Gelatin-free marshmallows melt slower: stay on low and keep stirring, up to 10 minutes. High heat makes hard treats.

  3. Fold in the cereal

Off the heat, stir in the vanilla and salt, then the cereal. Fold gently with the spatula until every piece is coated.

  4. Press lightly

Tip into the pan and press with the buttered spatula or a sheet of parchment just until level, about ¾ inch thick. Do not pack it down; packed treats turn hard.

  5. Cool and cut

Cool 1 hour at room temperature. Lift out by the parchment and cut with a buttered knife: a 9×13 cuts 6 by 4 into bars about 1½ by 3¼ inches, an 8×8 into 12.

  6. Melt the candy

Put each color in its own narrow mug with a third of the coconut oil. Microwave at half power in 30-second bursts, stirring between, until smooth and fluid.

  7. Dip, then sprinkle straight away

Hold a bar by the bottom, dip the top third, let the excess drip back for 5 seconds and lay it on parchment. Shower the wet coating with matching jimmies over a bowl. Work two or three bars at a time.

  8. Eyes, then set

Press 2 or 3 candy eyes into the still-soft coating, mixing sizes, or glue them on with a dot of melted candy. Leave 20 minutes until firm.

Five Rules for Soft Bars and Clean Dipping

Dipping crispy rice cereal treat bars on a parchment-lined tray seen from above: three narrow mugs of melted lime-green, purple and orange candy coating, freshly dipped bars with glossy tops, small bowls of matching long sprinkles and candy eyes, a cut slab of crispy rice treats on a board with a knife, grey stone counter, bright daylight

Dipping: the top third of each bar into thinned candy melts, matching sprinkles on straight away, eyes before it sets.

1

Low heat, always

Marshmallows melted on high turn hard and stringy once they cool. Low heat and a few extra minutes keep the bars soft for days.

2

Extra marshmallow

16 ounces to 6 cups of cereal, more than the usual 10. The extra is what keeps the bars chewy under the coating.

3

Press, do not pack

Spread with a buttered spatula just until level. Packing squeezes out the air and makes dense, hard bars.

4

Thin the melts

A teaspoon of coconut oil per 6 ounces makes candy melts fluid enough to dip in a thin layer. Keep water away; one drop makes them seize.

5

Sprinkles within a minute

Candy melts start to set in about a minute. Dip two or three bars, sprinkle them, add eyes, then dip the next few.

Three Colors, Three Monsters

Up close: lime-green coating under a mop of green sprinkles, two candy eyes and soft crispy rice below.

For the 24-bar card, dip eight bars in each color. The eyes give each monster its character:

Mix the eye sizes on every tray. Two big eyes look friendly, three small ones look silly, and one giant eye is the one children fight over.

8

Caramel Apple Treats on Sticks Fall flavor

9

Spread melted white candy melts over the cooled, uncut slab. While it is still wet, pipe four or five rings of melted dark chocolate and drag a toothpick from the center out eight times to draw the web. Set 20 minutes, then cut into 2-inch squares with a hot knife.

10

Graveyard Slab Crowd

Leave a 9×13 slab whole. Spread it with melted chocolate, scatter crushed chocolate sandwich cookies over it as dirt and stand oval vanilla cookies, piped with RIP in chocolate, upright as tombstones. Green sprinkles make the grass. Set 30 minutes and slice it at the table.

11

Black and Orange Layered Treats Make ahead

Make two half batches. Tint one orange with gel color; stir 2 tbsp cocoa powder and black gel color into the other. Press the black layer lightly into a lined 9×13, spread the orange layer on top, cool 1 hour, then cut into bars so both stripes show.

Halloween Snacks Rice Krispies: FAQs

What Halloween snacks can you make with Rice Krispies?

Monster bars dipped in colored candy melts with sprinkle hair and candy eyes, the ones on the pin, plus jack-o’-lantern pops, spiderweb squares, Frankenstein bars, mummy treats, witch hat cones, ghost shapes, pumpkin patch bites, caramel apple treats, a graveyard slab and black and orange layered bars. All 11 are above.

How do you make monster crispy rice treats?

Melt butter and 16 oz marshmallows on low, fold in 6 cups of cereal and press lightly into a 9×13 pan. Cool 1 hour and cut 24 bars. Dip the top third of each in thinned candy melts, cover with matching jimmies straight away and press on 2 or 3 candy eyes. Set 20 minutes.

How do you keep crispy rice treats soft?

Melt the marshmallows on low heat, use 16 oz for 6 cups of cereal, and press the mixture just until level instead of packing it. Store the bars airtight at room temperature, never in the fridge.

Can you dip crispy rice treats in candy melts?

Yes. Melt candy melts at half power in 30-second bursts with about 1 tsp coconut oil per 6 oz, so they are fluid. Dip cooled bars, let the excess drip for 5 seconds and lay them on parchment.

How do you get candy eyes to stick?

Press them into the candy coating while it is still soft, within a minute of dipping. If it has set, glue each eye on with a small dot of melted candy.

Are marshmallows halal?

Most standard marshmallows are not, because they are made with pork gelatin. Use marshmallows labeled halal (made with beef or fish gelatin) or gelatin-free vegan marshmallows. Both work in this recipe.

Do gelatin-free marshmallows work in crispy rice treats?

Yes, but they melt more slowly. Keep the heat low and stir for up to 10 minutes until smooth; a teaspoon of water helps. The bars set slightly firmer, so press even more lightly.

How far ahead can you make Halloween crispy rice treats?

Up to 2 days ahead, fully decorated, stored airtight in one layer at room temperature. They are best within 3 days. For the softest bars, make and cut the slab the night before and dip in the morning.

Can kids help make monster treats?

Yes. An adult handles the hot marshmallow and the cutting; children aged 4 and up can shake on the sprinkles and press on the eyes, and older children can do the dipping.

How many treats does a 9×13 pan make?

24 bars about 1½ by 3¼ inches, cut 6 by 4, which is the size on the pin. Cut it 8 by 6 for 48 minis for a grown-up party, or 4 by 3 for 12 big bars.

How many treats do you need for a class party?

One per child plus a few spares for teachers and siblings. For a class of 20 to 25, make the 36-bar size. The table above covers family parties up to bake sales.

How do you wrap crispy rice treats for a class party?

Wait until the coating is fully firm, about an hour after dipping. Slide each bar into a cellophane treat bag, close it with a twist tie and label the ingredients for the teacher.

Are crispy rice treats gluten-free and nut-free?

Not always gluten-free: most crispy rice cereal contains barley malt, so choose one labeled gluten-free. The ingredients are nut-free as written, but check candy melts, sprinkles and eyes for “may contain” warnings.

What can you use instead of candy melts?

White chocolate chips melted with a little coconut oil and tinted with oil-based candy color. Water-based gel color makes chocolate seize, so use oil-based or powdered color.

Save the pin so the monster treats, the class-party table and all 11 ideas are one tap away.
