Why These Spooky Halloween Snacks for Adults Work

Creepy, not cutesy

A mozzarella eyeball that stares back from a party pick reads as Halloween for grown-ups: no candy eyes or cartoon faces, just olives, cheese and salami.

Antipasto in disguise

Briny olives, milky mozzarella, savory salami and a little chili heat. The flavors adults reach for at any party, dressed for October.

No oven, all make-ahead

Twenty-five minutes for two dozen, and they wait in the fridge for hours. The oven stays free for the mummy bites.

Easy and cheap

One olive, one cheese ball, one slice of salami per skewer. It is the least expensive way to put something dramatic on the table.

Number 1 of 10, and the skewers on the pin. The card makes 24 skewers, enough for 10 adults as part of a spread; tap 12, 36 or 48 and the shopping list changes.

Ingredients

  • 12243648 large pimento-stuffed green olives
  • 5101520 pitted black olives, sliced into rings (the pupils)
  • 12 (3 oz)24 (6 oz)36 (9 oz)48 (12 oz) halal beef salami, thin slices
  • 12243648 small basil leaves (optional)
  • 12243648 4-inch bamboo knot picks
  • 1 tbsp2 tbsp3 tbsp¼ cup extra-virgin olive oil, for the marinade (optional)
  • ¼ tsp½ tsp¾ tsp1 tsp red chili flakes, for the marinade
  • ½ tsp1 tsp1½ tsp2 tsp fresh rosemary, finely chopped, for the marinade
  • 1 pinch1 pinch2 pinches2 pinches flaky salt, for the marinade
  • rosemary sprigs and extra chili flakes, to serve

Salami: halal beef salami, sliced thin; most deli salami is pork, so read the label. Mozzarella: cherry-size balls, about 24 to an 8-oz tub; microbial-rennet cheese if that matters at your table. No black olives? A dot of thick balsamic glaze makes a glossy pupil.

Instructions

  1. Marinate the mozzarella (optional)

Drain the mozzarella and pat it dry. Toss with the olive oil, chili flakes, chopped rosemary and salt. Cover and chill 30 minutes, or up to overnight.

  2. Cut the pupils

Slice the black olives crosswise into rings about ⅛ inch thick; the middle rings are the roundest. Drain them on paper towel so they grip the cheese.

  3. Fold the salami

Fold each salami slice in half, then in half again, into a thick wedge. It is the foot the skewer stands on.

  4. Thread the skewers

Push a green olive up to the knot of each pick, pimento facing out, then a mozzarella ball through its middle, then a basil leaf if using, then the folded salami, so the point is hidden in the salami.

  5. Press in the pupils

Pat the outward side of each ball dry. Press the end of a drinking straw in about ⅛ inch, twist and lift out a small plug (or make a tiny slit with the tip of a paring knife), then press an olive ring into the hollow.

  6. Board and serve

Stand the skewers on their salami feet on a slate or dark board, all eyes facing the same way, or lay them in rows. Scatter chili flakes and rosemary sprigs. Serve within 2 hours at room temperature.

Four Rules for Eyeballs That Stay Put

Assembling mozzarella eyeball skewers on a wooden board seen from above: a bowl of mini mozzarella balls glossy with olive oil, chili flakes and chopped rosemary, a dish of pimento-stuffed green olives, black olive rings drying on paper towel, a stack of folded red salami slices, bamboo knot picks, a drinking straw and a small paring knife, a few finished skewers in a row, soft daylight

Assembling: marinated mozzarella, green olives, black olive rings drying on paper towel, folded salami, knot picks and a drinking straw for the sockets.

1

Dry before you press

Oil and brine make pupils slide off. Pat the side of each ball with paper towel just before the olive ring goes in.

2

Make a socket

A shallow plug lifted out with a straw lets the pupil sit flush, so it stays put for hours instead of minutes.

3

Olive at the knot, salami at the foot

The green olive caps the top. Salami folded in quarters hides the point and gives the pick a flat foot to stand on.

4

Cold to thread, cool to serve

Cold mozzarella threads cleanly without splitting. Set the board out 20 minutes before guests arrive so it tastes milky, not icy.

Six Ways to Make Eyeball Skewers

Extreme close-up of a mozzarella eyeball skewer: a glossy white mozzarella ball with a black olive ring pressed in as the pupil, a pimento-stuffed green olive above it at the knot of a bamboo pick, folded red salami below, flecks of red chili, shallow depth of field, soft side light

Up close: the black olive pupil pressed into its socket, the pimento-stuffed olive above and folded salami below.

Same pick, same stare, a different finish. Tap one:

Mozzarella Eyeball Skewers

The skewers above: green olive, mozzarella eyeball with a black olive pupil, folded halal beef salami. The ones on the pin.

Bloodshot Eyeball Skewers

Before threading, paint thin, wiggly red veins across each ball with a toothpick dipped in sriracha or beet juice, working out from where the pupil will sit. Creepier, and two extra minutes a dozen.

Balsamic Dot Eyeballs

Skip the olive rings and add a dot of thick balsamic glaze to each ball with a toothpick in the last 30 minutes. Glossy, very dark and a little sweet against the salami.

Chili-Marinated Eyeballs

Marinate the mozzarella overnight in olive oil with chili flakes, crushed garlic, lemon zest and oregano. Drain well and dry the pupil side. Serve the leftover oil with bread.

Veggie Eyeball Skewers

Swap the salami for a folded strip of marinated sun-dried tomato or grilled zucchini, and keep the green olive on top. Same eyeball, same stare.

Eyeball Grazing Board

For 20 or more, skip the picks and scatter the eyeballs over a slate board between rolled halal salami, both olives, crackers and the black sesame hummus, with party picks in a small jar.

Spooky Halloween Appetizers for Adults, Warm and Cold

Numbers 2 to 5, for the savory end of the table:

2

Mummy Pastry Bites With Spiced Beef Warm

Halal ground beef browned with onion, garlic, cumin, smoked paprika and a spoon of tomato paste, then cooled and spooned onto puff pastry squares. Wrap with thin pastry strips as bandages, brush with egg and bake at 400°F for 15 to 18 minutes. Two black sesame seeds for eyes.

3

Spider Web Deviled Eggs With Sriracha Make ahead

Yolks mashed with mayonnaise, Dijon and smoked paprika, piped back into the whites. Pipe two rings of sriracha mayonnaise on each, drag a toothpick from the center outward for the web, and add a black olive spider: half an olive for the body, slivers for the legs.

4

Roasted Red Pepper Eyeball Caprese No cook

Cherry tomato, basil and a mozzarella ball on a party pick, the cheese finished with a small disc of roasted red pepper as the iris and a black olive dot as the pupil. Drizzle with balsamic glaze. The red-eyed sister of the skewers on the pin.

5

Witch-Hat Savory Cheese Cones Party

Flour tortilla quarters rolled into cones, pinned with a toothpick, brushed with oil and baked at 375°F for 7 to 8 minutes until crisp. Pipe in cream cheese beaten with chives, dill, garlic and lemon zest, and stand each cone on a round cracker as the brim.

Creepy Dips for the Halloween Spread

A spooky Halloween appetizer spread for adults seen from above on a dark table: a black slate board of mozzarella eyeball skewers, a bowl of gray black sesame hummus with black flatbread wedges, spider web deviled eggs on a platter, witch-hat tortilla cones on round crackers, shards of dark chocolate bark with pretzel bones, small black bowls of roasted chickpeas, mini pumpkins and lit pillar candles, warm moody light

Spooky Halloween Snacks for Adults: FAQs

What are some spooky Halloween snacks for adults?

Mozzarella eyeball skewers, mummy pastry bites with spiced beef, spider web deviled eggs, red pepper eyeball caprese, witch-hat cheese cones, black sesame hummus, a black bean skull dip, chocolate bark with pretzel bones, caramel apple nachos and spiced roasted chickpeas. All ten are above.

How do you make mozzarella eyeball skewers?

Thread a pimento-stuffed green olive, a mini mozzarella ball and a folded slice of halal beef salami onto a bamboo knot pick. Pat the cheese dry, lift out a shallow plug with a drinking straw, and press a black olive ring into the hollow as the pupil.

How do you get the olive pupil to stay on the mozzarella?

Dry the cheese where the pupil goes, then press the end of a drinking straw in about 1/8 inch, twist and lift out a small plug. A drained olive ring pressed into that hollow stays put for hours.

Can you make eyeball skewers the day before?

Marinate the mozzarella and slice the olives the day before. Thread the skewers up to 6 hours ahead and add the pupils up to 4 hours ahead, covered in the fridge. Fully assembled the night before, the cheese weeps and the pupils slide.

How many skewers per person for a Halloween party?

Two to three per adult when they are one of five or six snacks, four to five when the snacks are dinner. For 20 adults on a mixed spread, make 48; the party math table covers 6 to 30 guests.

What are easy and cheap Halloween appetizers?

Eyeball skewers need one olive, one mini mozzarella ball and one slice of salami each. Spiced roasted chickpeas, the black bean skull dip and spider web deviled eggs are the other budget picks here, all made from pantry staples and eggs.

Is the salami halal?

Use salami labeled halal beef; most deli salami is pork or a pork blend, so read the label. Halal turkey salami works too. For a fully halal board, choose mozzarella made with microbial rennet.

What can you use instead of black olives for the pupils?

A dot of thick balsamic glaze, a ring of pitted kalamata olive, or a small circle of nori punched out with a drinking straw. Each sits in the same straw socket.

Are these spooky snacks spicy?

Only mildly. The chili flakes in the marinade add a little warmth. Leave them out for a gentle board, or paint sriracha veins on the eyeballs for more heat.

What goes on a spooky Halloween charcuterie board for adults?

The eyeball skewers, both dips with flatbread and tortilla chips, the chocolate bark and the roasted chickpeas, plus rolled halal salami, two kinds of olives, a soft cheese and black grapes.

How long can eyeball skewers sit out?

Up to 2 hours at room temperature, because of the cheese and salami. Set out half, keep the rest in the fridge, and swap the trays halfway through the evening.

How do you make black flatbread for Halloween?

Buy charcoal flatbread, or knead food-grade activated charcoal powder into a flatbread dough, about 1 teaspoon per cup of flour. Activated charcoal can interfere with some medicines, so pita with black sesame seeds is the easy swap for a mixed crowd.

Are these Halloween snacks alcohol-free?

Yes. Everything here is alcohol-free and pork-free, with halal beef salami and halal ground beef. Serve them with spiced apple punch or sparkling cranberry juice.

Can you make vegetarian eyeball skewers?

Yes. Swap the salami on the skewers for a folded strip of sun-dried tomato or grilled zucchini. Eight of the other nine snacks are vegetarian as written; only the mummy bites contain meat.

Save the pin so the eyeball skewers, the party math and all 10 snacks are one tap away.
